Learn to make salami or sausages in a fun private workshop held at Parsonage Farm, then stay overnight at a choice of four Epicurean Collection inns nearby. Dinner and a cooked breakfast are included, and you will go home with a hamper of delicious Hampshire produce to compliment what you make, as well as a smart apron as a souvenir of your experience. Make your own way to Parsonage Farm, a small family-run farm in the beautiful northern Hampshire countryside, which has a fine reputation for producing and selling charcuterie and fresh meat.
You can choose to make either salami or sausages during this fun, interactive and very hands on half-day workshop.
If you choose to make salami, you will learn the processes involved. This includes preparing the meat, seasoning it, mixing it, skin stuffing and tying it ready to dry. You will make two varieties, which will be sent on to you at a later date when they are ready to eat. During the workshop there will be opportunity to try some Parsonage Farm salami.
If you choose to make sausages, you will learn the processes involved. You will get to choose seasonings, taste them and make two batches: one pork and one lamb or beef. You’ll also learn to link them together, traditional style, so that you can carry them home with you.
Both courses start with coffee and homemade cake, and you’ll be given a hamper of Hampshire produce to take home with you, as well as a Parsonage Farm apron.
